Weekly Meal Plan 1/6/2019

Yum

January 6, 2019 By Laura Ligos, MBA, RD, CSSD

The holidays can be fun but MAN do I crave routine. I can’t tell you how many people I’ve talked to recently who feel the same way. It’s funny, when we have routine, we crave variety and when we have too much variety, we crave routine, go figure. This week I was SUPER excited to be back in the routine of meal planning.

The past few weeks we have been all over the place between holiday parties, family functions, weddings, etc. so it’s been really hard to do anything consistently as far as food goes. I don’t stress about it and often plan as much as I can and let the rest fall into place.

Meal Planning Hour

This morning I went to a kettlebell class in my area and then was SO excited to get to the meal planning process. Probably more excited than one should be but whatever I’m the Sassy Dietitian, so I think it’s warranted ha!

I got this awesome new weekly planner with grocery list and I was so excited to use it. I actually went to Whole Foods, grabbed a coffee, and sat in their cafe to do my meal plan. Usually I’d do it at home but I was already out and about (and packed my planner with me) so I figured why not gain inspiration at the grocery store?!?

Whole Foods Grocery Haul

I shop at all different grocery stores in the area and am considering in 2019 making it a goal to create #sassyapproved shopping lists at each place, would you like that?! Let me know! However, Whole Foods is a go-to because I love the products they offer AND I know how to shop the sales. This haul cost me less than $100, which I think is pretty dan good for all I got!

  • Frozen salmon filets
  • @eatbanza elbow macaroni (on sale)
  • @hopefoods hummus (on sale)
  • Grapefruits (on sale)
  • PB & J + freeze-dried strawberries
  • beef broth
  • @organicgirl greens (on sale)
  • Veggies, fruit, herbs. : potatoes x 3 varieties, asparagus, peppers, onions, garlic, jalapeños, apples, green onions, parsley, lemons, limes
  • Canned goods: tomatoes, tomato paste, corn, beans

Note: I also have a few items at home already and picked up what I forgot at Whole Foods at Price Chopper! I also get Field Goods most Wednesdays so I get a mid-week veggie pick me up!

Weekly Meal Plan

It’s typical that I make 2-3 dinners per week, 1-2 breakfasts, & 1-2 lunches. Since I’m making 3 dinner options, I know i’ll have plenty for leftovers for lunch & maybe even breakfast! If these recipes turn out (hopefully they do) I’ll be sharing them on the blog soon!

  • Steak Tip Hash featuring @primalbutcher
  • Sheet Pan Honey Garlic Salmon, Asparagus, & Fingerling Potatoes
  • Bison Chili Mac & Cheese
  • Breakfast: pb&j overnight oats
  • Lunch: tuna & egg salad wrap

Do you meal plan? If not, what’s stopping you?!

xoxo,

Sassy

Sassy approved shopping lists would be awesome! I’m saving this post in the mean time for ideas 🙂
