Turnip Shepherd’s Pie
Hey there! It’s time for a new recipe this week, I hope you are ready. Shout out to my friend Chia for this inspiration! She told me she was making a Shepherd’s Pie so of course I wanted to try one of my own, using the ingredients I had on hand, simple as that. This time of year, root vegetables are abundant and so I wanted to make sure I did not let any of them go to waste. I also love to make meals that will last more than one night. Many people always complain that they do not have time to cook daily and look I get it! When you use your crockpot or make a nice casserole like this Shepherd’s pie, you have the opportunity for leftovers and a night off from cooking, sounds like a win-win right?
Shepherd’s Pie, also known as Cottage Pie, is nothing more than a meat pie with a potato crust. Kind of like a pot pie but no flaky crust! Any ground meat can be used and certainly there have been many variations over the years. I decided to take a stab at it and vary up the pie and the crust part. Turned out quite tasty and easy to make!
Certainly you can use mashed white or sweet potatoes as the topping but I had turnips on hand and no potatoes, so turnips it was! Feel free to add any other leftover veggies to your meat base to ensure you do not let any go to waste. Let me know if you try it!
