Sassy St. Paddy’s Shake
It’s hard to believe it but Daylight Savings Time has sprung us ahead one hour and St. Patrick’s Day is this week. I feel like it came out of nowhere and I am crossing my fingers spring is here to stay. While I have been known to hit the ski slopes late into March I need some time to be home, off the slopes this year and get settled into the new job and new house. Besides, we had a fabulous time in Montana and there is only slush out here on the east coast, silver lining?
Alright, onward! With St. Paddy’s Day comes the dreaded Shamrock Shake and my 100 eye rolls to go with it. You knew I wasn’t just going to talk about the weather, right?
Well, the Shamrock Shake is literally a dietitian’s worst nightmare, there are over 50 ingredients in one shake and do not even get me started on the caloric and macronutrient content of the fake green monster. I get it, we all like to indulge once in a while, but do we really need to indulge in something that is filled with chemicals, artificial ingredients and sugar galore? I think, not. There are far better options out there and perhaps if we stopped giving a not-so-great company our hard earned dollars we would see the food industry play catch up and offer us real food that we can feel good about. I know it’s happening but much slower than I would hope for.
That is why I created my sassy and delicious St. Paddy’s Day shake that you can proudly post on Instagram, Snapchat and all other social media outlets for all to see. You shouldn’t have to feel like you are missing out and you won’t have a stomach ache and a sugar hangover after consuming it, win-win-win! I would recommend a banana or avocado to make this recipe even creamier and tastier than it already is. - 4 cups raw spinach
- 1– 13 oz. can full fat coconut milk (~1–3/4 cups)
- 2 Tablespoons maple syrup
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon pure peppermint extract
- Place all ingredients in a blender and blend on high until well combined.
- Serve over ice or place in ice cream maker and mix per ice cream maker directions.
- Top with coconut whipped cream and/or homemade chocolate sauce
