
Roasted Sweet Potato & Parsnip Fries

- 2 medium sweet potatoes, peeled and sliced
- 2–3 medium parsnips (~1lb.) peeled and sliced
- 1/4 cup coconut oil, melted
- 1–2 tsp. Cinnamon
- 1/2 tsp. Salt
Instructions
- Preheat oven to 450 degrees.
- Line cookie sheet with parchment paper
- Place peeled and sliced sweet potatoes and parsnips in a bowl with coconut oil, cinnamon and salt. Stir well until all vegetables coated evenly.
- Spread vegetables out evenly over cookie sheet and bake in oven for 20 minutes until lightly browned and cooked through.
