Roasted Sweet Potato & Parsnip Fries

Ingredients

Scale
  • 2 medium sweet potatoes, peeled and sliced
  • 2–3 medium parsnips (~1lb.) peeled and sliced
  • 1/4 cup coconut oil, melted
  • 1–2 tsp. Cinnamon
  • 1/2 tsp. Salt

Instructions

  1. Preheat oven to 450 degrees.
  2. Line cookie sheet with parchment paper
  3. Place peeled and sliced sweet potatoes and parsnips in a bowl with coconut oil, cinnamon and salt. Stir well until all vegetables coated evenly.
  4. Spread vegetables out evenly over cookie sheet and bake in oven for 20 minutes until lightly browned and cooked through.
