20+ Delicious & Nutritious Pumpkin Products & Recipes for National Pumpkin Day 2018

Yum

October 26, 2018 By Laura Ligos, MBA, RD, CSSD

Hi, my name is Laura aka Sassy and I love all things pumpkin. The good news?! Today is National Pumpkin Day so I don’t have to feel bad about loving the rotund squash. Just kidding, I never feel bad about the food I eat/like, so let’s carry on.

To celebrate the day, I figured I’d give you some of my favorite pumpkin recipes so you too can indulge. I love that it falls on a Friday so that I can also claim this is a Friday Favorites post. After a week of travel, catching a cold, having no voice, etc. etc. it’s nice to be able to just put together a list of delicious recipes for you.

National Pumpkin Day

While, yes, there is a day for everything, I really love days that celebrate my favorite foods/beverages. To name a few, I love chocolate, wine, coffee, and pumpkin. While there are tons of other foods I love, those may be my top 4. I even went to pull a few of my recipes that have pumpkin, and I have far more than I realized, whoops! I guess I’m a little bit biased.

Speaking of National Pumpkin Day (I have no idea how to segue into this so let’s just go with it), I had the opportunity to run into Maggie, a fellow RD, who runs the blog Once Upon a Pumpkin .at the conference I was at this past week. She is a rockstar and even nicer in person, I love when that happens. Anywho, she has some amazing pumpkin resources, recipes, and brand recommendations on her website so go check her out for all your pumpkin needs.

Pumpkin Everything

Pumpkin is so rich in beta-carotene (converts to vitamin A in the body), vitamin C, fiber and so many other glorious nutrients. While many of you might not care about the health benefits (I do) you can rest assured that you’re not only eating delicious food but also nutritious. Just be careful with items that have the spice but nothing else nice in them (aka all the sugar and artificial crap). Here are a few pumpkin items that aren’t recipes I have been loving lately!
