Happy Waffle Day
As it turns out today happens to be Waffle Day. However, since we are a world of overindulgence as it comes to food and we need a magical day for every food item, there are two waffle days, today and August 24th. However, in the middle of summer I never want to bring out my waffle iron because it is too hot out to warrant that nonsense. So I wanted to pay tribute to the waffle today both by giving you plenty of options from some fellow real food bloggers and by giving you my spin on a Savory Waffle, because I like a challenge
When my intern informed me that today was in fact Waffle Day, I at first wanted to cringe at the idea that we as a society were going to worship the waffle for a day. But, after some contemplation I decided not to be such a Debbie-downer and start looking into healthy options for Waffle Day. Lo and behold many of my fellow bloggers out there have created healthier waffle recipes and they sound quite delicious if I do say so myself. I did not want to feel left out so I decided I wanted to find a way to get sweet potatoes into my waffles, and of course use oats because they are my new favorite go-to food.

Alright, now that we have given some shout outs to some great people doing the waffle proud, it’s time for my own shot at a waffle recipe! I wanted to create a spin on the waffle that is not all that common, a savory waffle. Much like my savory oats, I wanted to incorporate real food into a standard American dish. Sweet potatoes and oats seemed like the way to go and no added sugar here, win-win-win.
These waffles are savory with a hint of sweet. The cheddar gives them a nice bite and pairing them with eggs and avocados leads to a deliciously filling meal, complete with all real food. You can certainly top this with maple syrup but I wanted all savory all the way, and Siracha sauce it was. Enjoy!

Savory Sweet Potato Waffles
Ingredients
- ½ cup oat flour (grind ~1/2 cup of GF oats|http://amzn.to/22KVMvr)
- ½ cup arrowroot powder
- 2 teaspoons baking powder
- Pinch of salt
- 2 eggs, beaten
- ¼ cup cheddar cheese, shredded
- 1 small sweet potato, mashed and peeled (~1/2 cup)
- 3 Tablespoons ghee/butter, melted
- Toppings: poached eggs, avocado, Siracha, bacon, etc.
Instructions
- Grease a waffle iron and preheat.
- In a medium bowl, sift together oat flour, arrowroot powder, baking powder and salt, set aside.
- In a large bowl mix together eggs, cheese, sweet potato and ghee/butter.
- Add dry ingredients to egg mixture until smooth consistency.
- Pour batter into waffle maker and cook per instructions.
I wish you all a wonderful Easter weekend if you celebrate and go ahead have a waffle and then get back to eating your real food diet. I’m down in Maryland enjoying time with family and friends and even got to hit a workout at a local CrossFit Gym, shout out to Outsiders CrossFit for taking me in and kicking my booty!
