If you don’t think you have the skills it takes to bake bread, believe me, this is the easiest thing I think I have ever made besides overnight oats. This gluten-free no knead bread is so simple AND tastes delicious. I seriously cannot wait to bake my next loaf because this one I made for this post is somehow already gone (we’ll blame the kitchen elves, am I right?!)
Gluten-Free Bread?
Funny world we live in right? Gluten is the protein that is formed when you combine flour with water, but we can actually now bake bread without it. Gluten is that elasticity that bread needs to stay together. Yes, it is a wonderful thing but not for everyone. It is a hard protein for some to digest and I cut out gluten 10 years ago now and while I definitely have runs in with it sometimes I have found that I just feel better without it.
I also have a ton of clients who feel better without it too so I make them recipes they can enjoy AND make it so that the whole family enjoys it too. The cool thing is that now that it’s 10 years later, there are SO many gluten-free flour options. You don’t have to go to 10 stores looking for things like xantham gum because now you can use the flours that are pre-made for you, pretty rad.
So if there’s no gluten then what is there?! Well most use that thing I mentioned above–xantham gum, and others have found out the right combination of starchy items (ex. sorghum, tapioca, rice flour, etc.) mixed with gums (aka binders) and other ingredients to make products hold their own in baked goods. Now, hear me out, it is NOT ever going to be the exact same feel or flavor as gluten-containing bread and it is by no means any healthier. However, for those that do not tolerate gluten it can be nice to have an alternative, so here ya go.

Since we are on the topic, let’s discuss the best gluten-free flours on the market. Now, you can certainly make your own if you are up to it, but I prefer to spend the extra dollars for companies who make my life easier. There are many on the market but here are my favorites:

Comfort Food & Stress Eating
Okay, so I just posted about stress eating the other day. It seems appropriate that I would then post a bread recipe. I also have a cookie recipe coming soon, stay tuned. Listen, we are in the midst of a pandemic when I write this so it’s all relevant content, OKAY?!
Bread deserves it’s time to shine. It’s been through enough with the keto crew so I figured why not jump on board with the bread trend and help it shine. Certainly bread may not have the most nutrients ever BUT it certainly is the best vehicle for nutrients. I put an egg on almost every slice of this first batch, so we will call that a win.

Gluten-Free No Knead Bread
Okay, now for the part you’ve all been waiting for. I was inspired by Deanna Fox (local foodie & cook) to make No-Knead Bread. Deanna is the owner of Albany Cooking School and she has been putting out some live cooking videos. I honestly had no idea how easy no knead bread was until I watched her video.
I decided I had to try my hand at it and of course, I only had gluten-free flour at home since 1. I’m not a huge baker and 2. my stomach can only handle so much gluten before it’s a bloated heartburny mess. Any who, I was inspired and decided I should try something new. So, since we are in the midst of the pandemic, I got my friend on FaceTime and she made the exact bread with normal flour and we got to work.
This gluten-free no knead bread was delicious and can be made with any flavor combo of choice. Not sure if you want savory or sweet toppings? Just leave the garlic and red pepper flakes out. Want something sweet? Add cinnamon, the choices are endless.
I had so much fun making this I hope you do too. I recommend if you don’t have a nice dutch oven to make the investment as I use mine every week and can’t imagine my life without it, here’s a few options 1, 2 and 3. Enjoy!
Pro Tip: If you do not need to be gluten-free just swap in regular flour for similar results. My friend made hers at the same time (via FaceTime) and our breads were very similar!
Mix the flour, salt, & yeast together in a large glass bowl; gently pour water in and mix with a wooden spoon until combined and a wet dough is formed.
Cover the bowl with dough with a kitchen towel and let sit @ room temp for ~8 hours (or overnight).
Remove cover and place a handful of flour on a large piece of parchment paper. Fold dough onto the parchment paper and form into a large ball. Cover with kitchen towel & let sit for an hour–do not knead!
Preheat oven to 450F and place a dutch oven into the oven for the last 30 minutes of the hour rest the dough is taking.
Remove dutch oven from the oven–careful, IT'S HOT!
Place parchment paper with dough in it into the dutch oven, use a knife to slice a few marks into the top of the dough, cover and return to oven.
Cook covered for 30 minutes, then remove lid (careful, IT'S STILL HOT) and cook uncovered for an additional 15 minutes.
Remove from oven (if you don't know it's hot by now, I can't help you) and let cool on the parchment paper on a wire rack for 10 minutes. Slice & eat!
