Last week I posted a new waffle recipe in honor of Waffle Day and I placed a poached egg on top of it, with avocado slices, of course. When I posted the picture on Instagram, I had a follower ask how I made such a pretty poached egg, and I thought, hm what a great question! Eggs are so easy to make, unless you have no idea how to make them, and then they seem impossible to get right. Let’s fix that!
Eggs can be rubbery, dry, gritty and runny and all of those words make it seem very unappetizing. Instead eggs should be soft, buttery, gooey and delicious, now that’s more like it! My friend Rita stopped by last week and she dropped off a dozen fresh picked eggs. She literally went to her friends house, picked the eggs, put them in a carton and brought them to me. The freshest eggs I may have ever had, there were even feathers still on them. (Don’t worry I washed them first). So I have been indulging and pairing them with all different meals over the past week.
Eggs sometimes get a bad reputation because they are high in cholesterol. But what about all the vitamins and minerals they have? We forget that eggs are one the best food sources of choline, biotin and selenium especially if farm fresh from happy and healthy chickens. Eggs are great for your hair, skin and nails as well as your brain, not to mention the egg white has protein to help keep you full and make all those gainzzz. Go ahead, eat the yolks and enjoy a deliciously perfect poached egg.
