Ah, breakfast! My favorite meal of the day. No, seriously. I love breakfast. I look forward daily to starting my day off with something delicious, filling and nutritious. Don’t believe me? I used to actually hate breakfast growing up, true story. Why? Well probably because most breakfast options that were considered “healthy” contained gluten and egg whites. While I can have egg whites I much prefer the taste of a whole egg. However, gluten was making me sick long before I even knew it was a problem. Any time I’d start with an english muffin, toast or waffles I’d end up with cramps, bloating, and gas, all things no middle schooler or high schooler wants to deal with on top of ALL the other awkward moments of the day. Any who, most days I’d go without breakfast much to my mom’s dismay and then I’d be left feeling tired and hungry.
Once I figured out what foods I could have in grad school, breakfast became a game changer. Eating food that my body liked and food that kept me satisfied on my long days of workouts, school, internships and work helped me have sustained energy and gave me something to look forward to, win-win. I still, to this day, look forward to breakfast and my hot cup of black coffee.
This year, we decided to buy both a 1/2 pig and a larger freezer, to store said pig, and with that pig came a good deal of ground pork. I have done many things with the ground pork but my absolute favorite thing to do with it is make breakfast sausage patties on Sunday night so that I have an option for protein in my breakfast daily during the week. They are great heated up but even taste good cold. I prefer to eat mine with dijon mustard, but feel free to spice it up however you like. People constantly ask me how to get protein in breakfast and this is one of my go-tos along with eggs, leftovers, collagen powder and more.
Note: in this recipe, feel free to use any type of ground meat for your sausages as it will turn out delicious, I just happen to have pork from my pasture raised pig. Enjoy!
1 pound ground pork (substitute other ground meat)
2 Tablespoons coconut oil
1 teaspoon ground oregano
1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon ground turmeric
1/2 teaspoon dried parsley
Instructions
Mix all ingredients together until combined.
Form into pork into 2 ounce patties for ~ 8 patties.
Heat oil in skillet over medium heat.
Place patties in two batches in skillet and cook for 4-5 minutes each side until golden brown and cooked to an internal temperature of 165°F.
Alright, now go get your protein in breakfast so you start your day off feeling satisfied and energized. And then with all that new found energy, let me know…
Ah, I love breakfast so much! I keep thinking about making my own sausage. I buy this sweet apple chicken sausage and my husband LOVES it. I’m sure it’d be pretty simple to make on my own?! Gotta try out this recipe this weekend with some pancakes!
