I told you more recipes were coming! I had originally called this Roasted Red Pepper Zucchini SUMMER salad and then I realized summer is wrapping up, boohoo! However, you can really eat this anytime, so the word summer had to go. This is still a great recipe, especially for those of you who are harvesting your garden right now, as you may still have some delicious zucchini to eat, so why limit it to a summer thing, you know?!
Summer Time and The Living’s Fast
This summer has flown by, holy cow. I cannot believe it’s Labor Day Weekend this coming weekend, where did the time go?! I spent most of it figuring out what my new business would look like, coaching, swimming, traveling, cooking/baking, and honestly, I’m not sure what else.
The thing is, just because you’re busy, doesn’t mean you have to eat like crap. Honestly, I think the busier I am the healthier I eat, but I’m guessing that’s not the norm. How do I do it? I plan ahead!
I know, crazy ground-breaking stuff here. But it’s the truth when I’m busy I make a lot of lists and I plan ahead, that way I’m not left last minute grabbing food that doesn’t make me feel my best (read: take out/fast-food/convenience foods).
This salad has been added to my weekly meal prep because it’s easy, healthy, and delicious (not necessarily in that order). I know salads bore some people but I always feel good post-eating it so it’s worth the time and the space on my plate 🙂

Salads for Time
I love salads and I love side dishes so I figured, why not make a side dish that was also a salad. Most salads are boring, I get it, but this one, not so much. It has a few different textures and a whole lot of taste. I know, sounds like an ad, but I’m serious. Maybe I’m biased but roasted red peppers are the best and often underutilized in the kitchen. That’s why I shared my recipe for them last week.
The best part about this recipe? It’s easy to make. While I love spending hours in the kitchen, I recognize that most people do not, or frankly cannot because of the time constraint. The issue with that is that most healthy recipes are time consuming or flavorless. I’m really not into that so have at this tasty and non-time consuming salad recipe, enjoy!
Pro Tip: If you don’t have the time or the desire to make your own roasted red peppers, you can always find a jar at your local grocery store OR just use fresh/raw bell peppers and call it a day.

Roasted Red Pepper Zucchini Summer Salad
- Yield: 4 1x
Ingredients
- 2 Tbsp Extra Virgin Olive Oil
- 1 roasted red bell pepper, diced
- 4 medium zucchini, chopped
- 2–3 cloves garlic, minced
- 2 Tbsp herbs of choice (I used fresh basil)
- 1/4 cup green onion, chopped
- Salt & pepper, to taste
Instructions
- In a large skillet, heat oil over medium heat
- Add garli & zucching and saute until zucchini starts to soften
- Add remaining ingredients and saute for 3-4 minutes untile flavors start to mix, remove from heat and let sit.
- Serve warm or cold
Notes
Per serving: 2g protein, 6g carbohydrate, 7g fat
