Roasted Red Pepper Zucchini Summer Salad

  • 2 Tbsp Extra Virgin Olive Oil
  • 1 roasted red bell pepper, diced
  • 4 medium zucchini, chopped
  • 23 cloves garlic, minced
  • 2 Tbsp herbs of choice (I used fresh basil)
  • 1/4 cup green onion, chopped
  • Salt & pepper, to taste


  1. In a large skillet, heat oil over medium heat
  2. Add garli & zucching and saute until zucchini starts to soften
  3. Add remaining ingredients and saute for 3-4 minutes untile flavors start to mix, remove from heat and let sit.
  4. Serve warm or cold
