Gingerbread No-Bake Cookies (Gluten-Free, Dairy-Free, Nut-Free)

Ok, I know I just posted a cookie recipe featuring 88 Acres yesterday and I’m posting one again today and HATERS GONNA HATE! But, when I got the seed butters in the mail I really had not idea what I was going to make with them. I decided it was the time of year for cookies so I made the Chocolate Peppermint Crinkle Blossoms yesterday and now the Gingerbread No-Bake Cookies Today.

Both of these recipes are easy to make (this one is even easier than yesterday’s) and even easier to eat. I hadn’t made a no-bake in a long while (besides my protein balls) so I figured it was time to try it out. Usually any no-bake I’ve had is chocolate based but I love the taste of gingerbread, so here comes some Gingerbread No-Bake Cookies for you. 

Feel Good Cookies

These cookies have maple syrup instead of sugar. Keep in mind that sugar is still sugar. That being said some sugars are better than others. Maple syrup is one of those. It’s still sugar based, HOWEVER, it is far more natural and has some trace minerals (aka tiny nutrients) than refined white sugar.

These cookies only have 1/4 cup of sugar (maple syrup) which is FAR less than most cookies, and they are free of the top allergens so they are feel good cookies. Enjoy them for yourself any time of year or bring them to your cookie exchange with minimal effort needed! 

Gingerbread No-Bake Cookies

These cookies are gluten-free, dairy-free, & nut-free but not taste-free. So you can bring these anywhere with you and know that most people can eat them. They are made with only 4 ingredients too so anyone, and I mean anyone can make them.

If you don’t have the gingerbread sunflower seed butter, no worries! Substitute the gingerbread sunflower seed butter with any plain seed/nut butter and mix in 1/4 tsp ginger, 1/4 tsp cinnamon, & a pinch of ground cloves. 

Pro Tip: Refrigerate these cookies until ready to eat so that the coconut oil stays

Gingerbread No-Bake Cookies

  • Total Time: 5 minutes

Ingredients

Scale
  • 1/2 cup gingerbread sunflower seed butter
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil (melted)

Instructions

  1. Mix all ingredients together in a medium bowl, refrigerate for 5 minutes
  2. Form into 12 cookies & refrigerate until ready to eat!

Notes

In place of gingerbread sunflower seed butter: plain nut/seed butter + 1/4 tsp ginger, 1/4 tsp cinnamon, & a pinch of ground cloves
