It is that time of year, Valentine’s Day (a Hallmark holiday) is this weekend. And whether you have someone special you are spending it with or if you plan to make it a regular ol’ day, why not add some delicious brownies to the mix? I am not a huge dessert person and could go without cake, cupcakes, etc. but if a flourless or gluten-free brownie is presented to me I have an awful hard time turning it down. What can I say? Chocolate is one of my weaknesses, anyone else with me?
Brownies are often loaded with sugar so I am not recommending these as an everyday treat but instead as a once in a blue moon, I could use a brownie for this occasion, time. If you struggle with eating the entire batch then make the brownie recipe and bring it to a party or to work and share the fruits (or chocolate) of your labor. When I make brownies I go all in and make sure there is plenty of chocolate and I mean plenty, did you read the name of the recipe? TRIPLE fudge brownies. You are welcome.
I even added a sneaky coffee flavor in there (it is optional of course) to give it that extra richness that I love so much about the taste of coffee and chocolate. You can use any ol’ brewed coffee but I used Chameleon Cold Brew since my Whole Foods (and apparently Target) are not selling the deliciously smooth cold brew.
I think this would be amazing by itself of course but perhaps some vanilla ice cream and some fruit on top may just be the treat you were looking for. Remember, this is not your ticket to the spiral down the sugar-hole, instead this is a one time treat that you should enjoy the heck out of and then plan to make your next meal, your best meal.
Grease an 8″x8″ baking dish with ghee/butter/coconut oil.
Melt butter/ghee coconut sugar and 4 oz. chocolate in a small sauce pan over medium heat, stirring frequently (watch carefully so it does not burn), remove from heat to cool for ~3 minutes
In a separate mixing bowl, combine cocoa powder, eggs, vanilla extract, salt, arrowroot powder and brewed coffee
Add melted chocolate to mixing bowl and whisk together until smooth
Stir in chocolate chips and scoop into baking dish.
Place in oven for 20-25 minutes until center is cooked through
