This easy salmon salad is as easy as it sounds. Gather your ingredients and boom lunch (or any meal/snack really) is served! I need an easy lunch, otherwise, it’s likely that I will skip it, scrounge for snacks or do a little bit of both. It seems that many struggle with lunch as well because if it’s not prepared, it’s take-out or forgetttttaboutit.
Fish Lover or Hater?
I happen to be a huge salmon fan. That wasn’t always the case. I used to hate fish. I would dread the days my mom declared it was a fish night. She probably also dreaded it knowing I’d put up a fight.
Are you a fish lover? I know many that are and many that are not. I don’t think you should feel bad about not liking fish. While, yes, it is a good source of nutrients, it’s not for everyone. However, I find that many people do not like fish not because of the health benefits but because of the taste, texture, and smell.

If you are willing to try new things and try old things new again, then this recipe is for you. It’s a way to get fish in your diet because it tastes delicious and is sort of hidden. I’m not going to sugar coat it, it doesn’t taste like Frosted Flakes, but let’s be honest…I wouldn’t give you anything that tasted that way anyway. Sorry, not sorry.
Did someone say Salmon for lunch?
Yes. I hear you. Fish for lunch usually comes with a side of death stares and grumpy coworkers. You know what I say? Eat it anyway. Not in spite. Not because you don’t like them. Not because you want to prove a point. Simply because you want to eat healthily and fuel your body and eat something that is simple yet delicious.
You don’t have to apologize for that.
I used to eat sardines for lunch when I worked in the hospital. Sure they didn’t smell great but you know what? They were a GREAT talking point and made people think about their lunch. I got slack at first but once I got past the first time of bringing them in, it became a non-issue. Just don’t leave a can of fish draining in the trash can, okay?
Salmon Salad
While I love a good salmon filet atop a salad, this is a littttttttle different. Think chicken or tuna salad but made with salmon. It is a delicious protein-packed meal that can be enjoyed as is, with crackers or veggies OR on a sandwich. The possibilities are endless.
Not to mention, this week I talked about Superfoods and salmon happened to make the list. Coincidence? Maybe? Either way, add this new food to your lunch and watch your coworkers come strolling by asking what you’re eating. You’re welcome.
Pro tip: You can make this with fresh fish or sub in a white fish, completely up to you! Also if you don’t have one of the veggies, no problem add in something like celery or leave it out, it will still taste good!
