Okay, this recipe has been a long time coming. I have made this easy brunch board multiple times this year because we all needed a win and this was my win. I have always been a big breakfast for dinner gal and this made it more fun. You can certainly make this without putting it on display, but wouldn’t it be more fun if you got fancy with it?!
Is Brunch Healthy?!
I’m not even sure that I need to answer this question but YES, absolutely. Often what I see missing with breakfast or brunch is enough protein and/or enough color. This board has plenty or protein between the yogurt, peanut butter, sausage & bacon, BAM! There is also plenty of color on this board with fruit galore, so add whatever fruit is in season or that you are in the mood for and this board is not only delicious but also nutritious.
When I say color I’m usually referring to fruits and vegetables and the reason I stress the need for color is because these foods have a ton of vitamins, minerals and FIBER. Fiber helps to keep us full for longer and helps with regular bowel movements which is A++. So yes, this dietitian 100% thinks that brunch can be healthy just find a way to get protein and color on your plate and you’re on a good path to feeling great inside and out.
Breakfast for Dinner
I don’t know about you but I LOVE breakfast for dinner. Partly because it’s so dang good tasting and also because for whatever reason breakfast foods are so easy to make. This brunch board took maybe 30 minutes to throw together and the best part is you can make EVERYTHING beforehand. So if you want to prep it you can and then throw it together and look like you are fancy (because you are).
I make breakfast for dinner a staple in our house, it’s one of our go-to meals that I know both of us will love so there will be no debate IF we will eat it just a matter of WHEN. We probably have it 1x per month but sometimes in the winter months we crave it more often which is a-okay.
Easy Brunch Board
This Brunch board is super easy and you can 100% make it your own. If you prefer to use frozen waffles and sliced bananas, by all means GO FOR IT. Just try to add some from each of the categories:
Carb Vehicle: like a waffle or pancake. These help to hold things like yogurt & pb and are great carriers for fruit and syrup.
Fruit: add in any variety of fruit you have on hand or that you know everyone in the family will like. There is no right or wrong combo.
Protein/Meat: Protein keeps us full longer so having some will be helpful to make this brunch board stick with you. If you don’t like meat feel free to swap in cheese, smoked salmon, tofu or some other meat alternative.
Toppings: I love yogurt, syrup & peanut butter by you can get creative and add things in like jelly, chocolate chips, nuts/seeds, sprinkles, the options are endless.
You may also want to grab a nice LARGE wood board to place all these toppings on and some ramekins for toppings but feel free to just use a large platter or cutting board and leave toppings in their containers, it will do the trick.

Instructions
Fluffy Blueberry Pancakes
Spray a large skillet or nonstick pan and heat over medium heat.
Meanwhile, in large bowl whisk together all the ingredients except the blueberries until smooth.
Gently fold in the blueberries.
Once skillet is hot, add pancakes by ~1/4 cup portions and cook until they start to bubble ~2 minutes, flip and cook for an additional 60 seconds or until cooked through.
Repeat process until batter is done (makes ~12 pancakes).
Chocolate Waffles
Spray a waffle maker with cooking spray and preheat.
In a large bowl, whisk together all ingredients until smooth.
Add batter to waffle maker and cook per waffle maker instructions.
Repeat until all batter is gone. Makes about 10-12 waffles.
Brunch Board
To assemble brunch board, place waffles and pancakes down first then add meat of choice. Add small bowls or ramekins with toppings like yogurt, syrup & peanut butter. Finally top with fruit or choice.
Notes
Gluten-free: use gluten free flour
Dairy-free: use oil instead of butter, any type of milk & find dairy-free yogurt
