Happy summer friends! Man is it already flying by. It’s felt like a bit of whirlwind the past month between traveling and some big projects but I’m finally able to catch my breath. I’ve got some good news, though. I have an amazingly delicious and simple Chopped Summer Salad with Tuna & Avocado Lime Dressing for you, one that takes less than 15 minutes to make and is delicious and refreshing for this time of year (but also lets, be honest, year round as well).
I know I’m not alone during the summer in the chaotic mess. It’s easy to get wrapped up in the chaos and forget to take care of yourself. I like to flip chaos on its head and prioritize my health, nutrition, and fitness through it all. Sure, it’s not easy, it takes practice BUT I end up coming out of the chaos feeling better and not like I let it get the best of me. One of the main ways I do that is by making sure I’m still eating plenty of protein, fruits, vegetables and of course hydrating with water.
I know that sounds cheesy, but it’s the little things that can make all the difference. Frankly, it’s a habit now that I feel weird going a day without having enough fruits & veggies.

Portofino Tuna
Alright, let me back up and tell you a bit about Portofino Tuna. I was getting ahead of myself, as I normally do. Certainly if you need the recipe, scroll on down, but if you want to know WHY you should be trying out Portofino Tuna, stick around here a little longer.
Here’s the thing, I’m a big tuna fan as it’s such a quick and easy source of protein and is super portable, which in the summertime is key for me. While I love eating it as is out of the pouch or can when I’m on the road or on a hike, it’s really also a nice way to elevate your salad experience. The fact that it’s packed in Extra Virgin Olive Oil (aka EVOO) makes the tuna stay moist and gives it a smooth mellow flavor.
Not to mention, the ingredient list contains only 3 ingredients. That’s right 3 ingredients, including: wild caught tuna, EVOO and sea salt. Portofino Italian Style Tuna is hand selected and wild caught Albacore & Yellowfin tuna. If you don’t believe the quality based on the ingredients or my description, you’ll have to try the taste out for yourself so that your taste buds do the convincing for you. I love a good salad. However, I find so often that salads can be super flavorless (hello, iceberg lettuce) OR they can be packed with so much processed food that it makes me wonder how it can pass as a salad.
The tuna packed in EVOO along with all the veggies and blueberries really makes this to be not only a healthy and #sassyapproved salad but also one that is refreshing and filling. The combination of fat and protein help you stay full during your busy summer months and beyond.
Easy Meal Prep
Let me leave you with one last note before you get to making this delicious and easy to make summer chopped tuna salad. This salad is great for meal prep for the week. I recommend preparing all the ingredients for the salad, except the tuna and placing them into separate closed containers. Then make the dressing and keep that in it’s own container. When you are ready to eat the salads, open the tuna & pour ¼ of the dressing on. Bam! No more excuses for your lunches or dinners this summer.
Pro tip: You can use either the pouches or the cans of tuna in this recipe; use whatever is most convenient for you. The nice part is because they are in olive oil, you don’t have to drain them, just eat as is.

Ingredients
Scale
8 cups lettuce/mixed greens
2 cans Portofino Tuna in Extra Virgin Olive Oil
1 cucumber (sliced thin)
1 cup radishes (sliced thin)
1 red bell pepper (chopped)
1 cup blueberries
1/2 cup red onions (minced)
1/2 avocado (chopped (reserve other half for dressing))
1 cup Feta cheese (crumbled)
Avocado Lime Dressing
1/2 avocado
1 lime (juice)
1 Tablespoon extra virgin olive oil
1 Tablespoon apple cider vinegar
1 Tablespoon honey
2 water (more to thin)
salt & pepper (to taste)
Instructions
Add lettuce to a large bowl, top with tuna, cucumber, radishes, bell pepper, blueberries, red onion, avocado and feta if using.
In a blender or using an immersion blender, blend together ingredients for dressing until smooth. Add extra water to thin as needed.
Pour the dressing over salad and toss to combine.
Notes
Note: For meal prep, make into 4 salads by adding 2 cups of lettuce, ½ can of tuna, and ¼ of the rest of the ingredients. Leave dressing off until serving.
Tip: make this dairy-free by leaving out the feta cheese.
