Move over chocolate chip cookies & snickerdoodles there is a new cookie in town. These Chocolate Peppermint Crinkle Blossoms are here to stay. These delicious & easy to make cookies might be my new favorite. They have to contend with my pizzelles BUT they are a nice change of pace.
I’m not a baker. Granted, I started my love for cooking by baking but I just got out of the routine of it. For me it’s easier to ad lib cooking then have to follow a recipe for a baked good. However, when 88 Acres sent me their new seasonal seed butters, I had to try to find a way to use them. While normally I would just eat it by the spoonful or top a rice cake with it, I decided to get fancy this year.
Christmas Cookies
I mentioned on Instagram that I love cookies. This time of year I welcome them in my home. The rest of the year I try not to bring them in the home because they’re a food I have no control over. If they’re in the house, I’ll eat them. So, this time of year, I enjoy some balance. Balance to me means eating a well balanced diet but ALSO eating some cookies. The best part is? I have no regrets.
The only thing I ensure is that they are gluten-free as I know gluten does not make me feel good. I also try and find ways to make dairy-free cookies as JJ is lactose intolerant. Other than that I open up the sugar and get to baking. I try my best to use less sugar than normal as I’m still conscious of how sugar can make us feel, but it’s the holidays and I’m looking forward to enjoying myself a bit.
Sunflower Seed Butter
Someone asked me on Instagram why I recommended sunflower seed butter and if it had any benefit over peanut butter or other nut butters. The thing is that each food you eat has it’s own profile of nutrients. I found 88 acres a few years ago and fell in love with the company AND their food. There seed butters are my favorite and I love that they also appeal to those that have food allergies, it’s a win-win.
Sunflower seeds, however, are nutrient dense and rich in b vitamins, phosphorus, magnesium, iron, calcium, potassium, vitamin E & some protein. So, if you’re into nutrition, it’s a good idea. You can even get a discount on your first order using code Sassy, so go ahead and treat yo self!
Chocolate Peppermint Crinkle Blossoms
So, fun fact, one of my favorite cookies growing up was the mint chocolate crinkle cookie from Panera. I used to LOVE going there after swim practice, getting a bread bowl filled with broccoli cheddar soup and a side of a crinkle cookie. I loved the flavor, texture, and the reminder that it was the holiday season.
I haven’t had one of those cookies in YEARS so I decided when I saw 88 Acres Chocolate Peppermint Sunflower Seed Butter that I was going to give it a go. I also have to admit I love Candy Cane Kisses so I thought, why not make these cookies OVER THE TOP and turn crinkle cookies into crinkle blossom cookies. I mean, what could go wrong?!
Absolutely nothing, these cookies are amazing and JJ loves them too which is always a win in my book! Check out the notes below in case you can’t snag this seed butter in time for the holidays!
Pro Tip: feel free to make these without any kisses if you don’t have any or don’t feel like unwrapping 32 of them!
Preheat oven for 350°F & line a baking sheet with parchment paper
In a large bowl, mix together sunflower seed butter, sugar, baking soda & salt
Add in egg and mix until combined, refrigerate for 10 minutes
Add powdered sugar to a medium bowl
Form dough into 32 golf size balls and roll in powdered sugar, place balls on parchment lined baking sheet and bake in oven for 8-10 minutes
Remove from oven, and allow to cool for 2-3 minutes then place one candy cane kiss into each cookie, place cookies on cooling rack and allow to cool until hardened (if you can resist that long 😉 )
Notes
If you don’t have Chocolate Peppermint Sunflower Seed Butter you can use: chocolate flavored nut/seed butter with 1/4 tsp peppermint extract mixed in!
What are your favorite Christmas/Holiday cookies?!
xoxo,
Sassy
