One Skillet Lemon Rosemary Chicken and Sweet Potatoes
As you all can probably imagine, things have been crazy here lately what with a new job, coaching, blogging and all the things in between! I am sorry I have not been blogging up a storm lately but I am still here and have many ideas and posts in the pipeline for you, so hang on to your horses as they say. Did anyone else experience the ridicoulsouness yesterday that was SNOW in April? I tried to deny it all day until I had to go shovel out the car and driveway with JJ, the struggle was real this Monday.
Talk about being busy (do not get me wrong I actually LOVE being busy) next week I am headed to Denver and Boulder Colorado so if you are in that area of the country and/or have been there I would love to hear from you about what I should do, if you know anyone in the CrossFit world out there and anything else you think I should know for my trip there. I am going for work and plan on visiting as many CrossFit boxes as physically possibly in 4 days to talk all things food, nutrition, fitness and of course InsideTracker.
Since the theme today is busy I figured I would bring back a recipe I posted long ago on my old site. I thought it would be a GREAT idea to revisit this one in particular because when we are busy the first thing that tends to go is our healthy eating habits. This does NOT need to be the case. Instead, make eating healthy meals easy for yourself either by planning ahead and/or picking a recipe that takes minimal work and requires minimal clean up.
This Lemon Rosemary Chicken, a one skillet meal, will please the adventurous AND the not so adventurous eaters, plus the minimal clean up makes everyones’ lives just a little bit easier. Eat a delicious meal and then kick back and relax afterwards because after all we all could use a lot more of that in our hectic lives. Enjoy and remember we prioritize what we want in life, and eating healthy can be a priority just depends if we choose for it to be or not!
