Ingredients
Scale
- 2 Tbsp Extra Virgin Olive Oil
- 1 roasted red bell pepper, diced
- 4 medium zucchini, chopped
- 2–3 cloves garlic, minced
- 2 Tbsp herbs of choice (I used fresh basil)
- 1/4 cup green onion, chopped
- Salt & pepper, to taste
Instructions
- In a large skillet, heat oil over medium heat
- Add garli & zucching and saute until zucchini starts to soften
- Add remaining ingredients and saute for 3-4 minutes untile flavors start to mix, remove from heat and let sit.
- Serve warm or cold
