Seems like no better time than now for some cookies, am I right?! In this time of uncertainty it can sometimes be helpful to pick up some new hobbies (or maybe old ones) to deal with stress and find some joy wherever you can. For me, that is in baking. I usually am more of a cook and less of a baker, but I actually got started baking in the kitchen before I ever loved cooking. These Peanut Butter Chocolate Chip Oatmeal Cookies are easy to make and you probably have most of the ingredients in your house already. If you don’t most are available in the stores (I looked for you!)
It is hard to grasp what is going on in the world. It seems that everything changes hour to hour. Even grocery shopping has changed, which for me is quite upsetting. I love grocery shopping, I love finding new items and love getting inspiration from my shopping trips. Unfortunately, that’s just not in the cards right now.
That all being said, there are a lot of items that are in low supply or non-existent because so many people have stock piled and left little to none for others. One complaint I’ve heard (and seen) about is flour. Everyone is stuck at home so they want to bake bread, cookies, and everything else in between. BUT there is no flour, womp, womppppp. The good news? You can now make some cookies with no flour.
I was just grocery shopping for the first time in 3 weeks the other day, and even more good news, all the ingredients for these cookies were in stock, no shortage from what I can tell, so you are in luck.
Can’t Eat Just One
I’ve heard from a lot of you that working from home and/or being stressed has been hard and it’s affecting your eating. Here’s the thing, it’s OKAY. We are dealing with uncharted territories, and eating a few (or all) of the cookies is not the end of the world. That being said I’m not here to tell you to go on a full blown cookie diet, I just want you to fall somewhere in between, have some cookies but eat a veggie once in a while, lay on the couch but also go for a walk when you can. We want to strive for some kind of balance right now, not so that we feel restricted but quite the opposite so that we feel energetic, joyful and also gain some sanity.
So, eat these peanut butter chocolate chip oatmeal cookies, share them if you can, and if you truly feel like you just can’t eat one, have 2 or 3, it’s OKAY 🙂
Peanut Butter Chocolate Chip Oatmeal Cookies
I’m not sure what inspired me to make these cookies, it could’ve been all the instagram posts with sweet treats or maybe the TJ’s Peanut Butter Cups I’ve been eating, but for whatever reason I wanted oatmeal cookies. I didn’t feel like just any oatmeal cookie so I decided to make it with my favorite flavor combo of all time with peanut butter and chocolate chips.
These peanut butter chocolate chip oatmeal cookies hit the spot and they are easy to make so you don’t have to go all Martha Stewart in your kitchen. Make a mess, have fun, eat the cookies right out of the oven (just be careful, you’ll probably burn your tongue), and have fun with it.
Pro Tip: Make the cookie dough the night before and freeze in single serving sizes, then you can make as many or as little as you want, just up cooking time to 20 minutes or so.
