Ingredients

  • 1/2 cup coconut oil or butter (melted)
  • 1/2 cup brown sugar
  • 1/4 cup maple syrup
  • 1/2 cup peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup oat flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup rolled oats
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350F and cover a cookie sheet with parchment paper.
  2. Whisk butter/coconut oil with brown sugar, maple syrup, peanut butter, egg & vanilla in a large bowl until smooth.
  3. Mix oat flour, baking soda, salt, and rolled oats in a medium bowl.
  4. Add dry ingredients to the wet ingredients and mix until well combined.
  5. Fold in chocolate chips and place bowl in refrigerator for 10-20 minutes.
  6. Drop by heaping spoonfuls onto lined baking sheet and bake for 12 minutes. Allow cookies to cool a few minutes before transferring them to a wire rack.

Notes

To make oat flour, pulse oats in a food processor or blender for 30 seconds and boom! you have oat flour.
