- 1/2 cup coconut oil or butter (melted)
- 1/2 cup brown sugar
- 1/4 cup maple syrup
- 1/2 cup peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 3/4 cup oat flour
- 3/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup rolled oats
- 1/2 cup chocolate chips
Instructions
- Preheat oven to 350F and cover a cookie sheet with parchment paper.
- Whisk butter/coconut oil with brown sugar, maple syrup, peanut butter, egg & vanilla in a large bowl until smooth.
- Mix oat flour, baking soda, salt, and rolled oats in a medium bowl.
- Add dry ingredients to the wet ingredients and mix until well combined.
- Fold in chocolate chips and place bowl in refrigerator for 10-20 minutes.
- Drop by heaping spoonfuls onto lined baking sheet and bake for 12 minutes. Allow cookies to cool a few minutes before transferring them to a wire rack.
Notes
To make oat flour, pulse oats in a food processor or blender for 30 seconds and boom! you have oat flour.
