Grilled Salmon Tacos with Roasted Poblano Avocado Sauce

Ingredients

Salmon

  • 4 6 oz. salmon filets
  • 1 Tablespoon avocado oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 lime juice

Poblano Avocado Sauce

  • 2 poblano peppers
  • 2 avocados
  • 2 limes (juiced)
  • 1 tablespoon avocado oil
  • 1/4 cup cilantro
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon crushed red pepper flakes (optional)

Tacos

  • 8 corn tortillas
  • Toppings: cherry tomatoes, cilantro, corn, red onion, jalapenos, salsa, etc.s

Instructions

Salmon

  1. Preheat grill to medium heat
  2. Mix oil with lime & spices and spread evenly on top of salmon
  3. Place salmon, skin side down on grill and grill for 10 minutes or until salmon flakes easily

Poblano Avocado Sauce

  1. Place peppers on a foil lined baking sheet and broil for 5 minutes, turn over and broil for an additional 5 minutes.
  2. Remove from oven, and wrap peppers in foil so they are sealed for 5 minutes outside of oven, until skin is easy to peel
  3. Peel peppers and remove stem & seeds
  4. Add all ingredients for sauce to a blender and blend until smooth

Tacos

  1. Warm corn tortillas either on the grill, over gas-stove flame, or in the microwave.
  2. Assemble 2 corn tortillas with 3 oz. salmon with 1 tablespoon of sauce & toppings of choice for one serving.
