Turkey Burgers
- 1 lb ground turkey
- 3 cloves garlic
- 2 oz fresh baby spinach
- 2 oz. feta
- 1/4 cup olives
- 1 large egg
- 1 teaspoon oregano
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 burger buns
Whipped Feta
- 8 oz feta
- 1/2 cup plain greek yogurt
- 2 cloves garlic
- 1 Tablespoon olive oil
- 1/2 teaspoon black pepper
Red Pepper Relish
- 1 red bell pepper (diced)
- 1 cucumber (diced)
- 1/2 red onion (minced)
- 1 Tablespoon lime juice
- 2 teaspoons apple cider vinegar
- 1 Tablespoon honey
- 1/2 teaspoon salt (or to taste)
- 1/2 teaspoon black pepper (or to taste)
Optional burger bun topping
- 1/4 cup hummus
Instructions
Whipped Feta
- In a blender or food processor, put all ingredients for whipped feta in and blend until smooth. Place in a small bowl, cover and place in refrigerator until ready to serve.
Red Pepper Relish
- Place all ingredients in a small bowl, cover and place in refrigerator until ready to serve.
Greek Turkey Burgers
- Preheat grill to medium high heat & spray with cooking oil spray.
- While the grill is preheating, add all ingredients (except buns) to a food processor or blender and pulse until mixed (do not over mix!).
Alternatively you can chop all ingredients and mix burgers by hand. - Form turkey mixture into 4 large patties, flatten and place on plate.
- Grill on each side for about 8 minutes or until cooked to an internal temperature of 165°F.
- Toast burger buns on grill as desired, then optionally spread 1 Tablespoon of the hummus on each of the burger buns. Add burger patty and top with whipped feta & red pepper relish, enjoy!
