Easy Weeknight Cauliflower Gnocchi with sausage & frozen veggies

Ingredients

  • 10 oz. fully cooked sausage (like this), sliced
  • 1 Tbsp butter/ghee
  • 2 (12 ounce each) bags Trader Joe’s Cauliflower Gnocchi
  • 2 cups frozen spinach (or frozen veggies of choice)
  • 32 ounce marinara (like this one)

Instructions

  1. In a large skillet, heat sausage over medium heat. Saute for 5 minutes until warmed through, remove from skillet, set aside.
  2. Add skillet back to heat with 1/2 of the butter/ghee and both bags of gnocchi. Saute for 5 minutes.
  3. Add 2 Tbsp water to skillet and cover for 5 minutes until all water is evaporated.
  4. Add in the rest of the butter/ghee, spinach, sausage, & marinara, cover and allow all flavors to mix for 5 minutes making sure frozen spinach cooked through.
