Easy Sheet Pan Steak Fajitas

Description

Want a delicious & nutritious dinner but don’t want to be cooking for hours? This recipe is for you and for the whole family to enjoy.


Ingredients

Scale

2 Tbsp oil (avocado, olive oil, etc.)

2 tsp Chili Powder

2 tsp Paprika

1 tsp Cumin

1/4 tsp Black Pepper

Juice of 1 Lime

1/2 teaspoon Salt, optional

1 red onion, thinly sliced

3 bell peppers, thinly sliced

11/2 to 2 lbs steak (flank, sirloin, etc.)

Optional: tortillas, guac, sour cream, cheese, etc


Instructions

Preheat oven to 400°F

Grease a large baking sheet or line with foil

In a large bowl, whisk together oil, spices & lime juice

Add steak, onion & peppers to bowl with oil & spices and stir to coat evenly

Add steak & veggies to baking sheet in one layer and bake in oven for 12-15 minutes or until vegetables are tender and steak is cooked to desired doneness.

Serve in tortillas with toppings of choice.


Notes

Want to serve to little ones? Here are some notes:

  • Omit salt for those under 1 year of age
  • For 6-9 mo. cut steak into larger pieces (about the size of 2 fingers) for 6-9 months OR puree steak either solo or with peppers & onions in a blender with water (start with 1-2 Tbsp of water and add more to reach desired texture). 
  • For 9-12 months shred steak
  • For 12+ mo cut into cubes or smaller shreds
