Ingredients

- 1 Tbsp olive or avocado oil
- 1 lb ground beef (or chicken/turkey)
- 2 cans (15.5 oz each) beans, drained
- 1 yellow onion, chopped
- 3 bell peppers, chopped
- 4 cloves garlic, minced
- 1 sweet potato, washed & chopped
- 1 can (28 oz.) diced tomatoes
- 1 can tomato paste (6 oz.)
- 2 cups beef or vegetable broth
- 1 Tbsp paprika
- 1 Tbsp chili powder
- 1 tsp oregano
- 1 tsp cumin
- 1 tsp cocoa powder
- 1/2 tsp salt
- 1/4 tsp pepper
Instructions
- Add oil to Instant Pot, turn on and select Saute
- Add meat & saute until browned, ~5 minutes, turn off.
- Add the rest of the ingredients to the Instant Pot, stir to combine evenly, close & seal lid
- Select Manual (High) for 20 minutes. Once done, allow to naturally release for 10-15 minutes, then quick release the remaining pressure
- Top with greek yogurt/sour cream, cheese, green onions, jalapenos, avocado, etc. Enjoy!
