- 2 cups raw spinach
- 2–4 strawberries, sliced (tops removed)
- 1 Tbsp. pancetta
- ¼ avocado, diced
- 1 egg, soft boiled
- 1/4 small red onion, diced
- 1/2 tomato, diced
- 1– 6oz. chicken breast, cooked
- 1 oz. goat cheese, crumbled
- 1/4 green pepper, diced
Lemon Honey Vinaigrette
- Juice of 1 lemon + zest
- 2 Tbsp avocado oil (or other light oil)
- 1 Tbsp raw honey
- salt & pepper to taste
Instructions
- This one is super hard, get ready for an extreme recipe.
- Whisk together ingredients for dressing, set aside
- Assemble salad with all other ingredients & top with dressing.
