Homemade Chai Tea Latte


  • 22 bags black tea bags (tags & strings removed)
  • 16 cups water
  • 7 cinnamon sticks
  • 4 vanilla beans, cut down the middle lengthwise
  • 1 heaping Tablespoon whole cloves
  • 1 heaping Tablespoon cardamom, whole pods crushed
  • 7 Star Anise, whole
  • 2 teaspoons allspice, whole
  • 1 teaspoon nutmeg, ground
  • 1 teaspoons black peppercorns
  • 1 inch fresh ginger, peeled
  • 1 cup honey or maple syrup


  1. Place tea bags and water in a large stockpot and bring to a roaring boil.
  2. Turn down heat and add cinnamon sticks, vanilla beans, cloves, cardamom, star anise, allspice, nutmeg, black peppercorns and ginger, stir and allow to simmer uncovered for 25 minutes.
  3. Remove tea bags and continue to simmer for an additional 15 minutes.
  4. Remove from heat.
  5. In a large bowl or measuring cup strain tea using a fine mesh strainer. Add honey and stir.
  6. Keep spices for use again if making a second batch.
  7. Once cool, fill glass jars with chai tea creation and refrigerate for 1-2 weeks.
  8. Mix 1 part chai tea with 2 parts milk, warm up and froth.
