Gluten-Free Black Bean Avocado Toast

Ingredients

  • 4 slices gluten-free toast
  • 1 15.5 oz. can black beans (drained)
  • 1 tsp lime juice
  • 1/2 tsp sriracha (optional)
  • 1 avocado (mashed)
  • 2 Tbsp hemp hearts
  • 6 cherry tomatoes (halved)
  • salt & pepper (to taste)

Instructions

  1. In a saucepan over heat or a bowl over no heat, mash black beans, lime juice, sriracha, salt & pepper with the back of a fork or potato masher. (Heat can help speed up the process but not necessary!) 
  2. Meanwhile, toast bread to desired doneness
  3. Top bread with black beans, then avocado, hemp hearts, & tomatoes, enjoy!

I used Little Norther Bakehouse Gluten-Free bread in this recipe.
