Garlic Rosemary Smashed Potatoes
I hope you are not sick of potatoes yet, because I sure am not. We have been lucky enough to get potatoes in our Field Goods bag and as the weather cools down these veggies are just what the dietitian ordered. Last week, I shared a delicious soup recipe and I still had potatoes to spare. These delicious root vegetables are starting to take over the farmers market, CSA shares and supermarket shelves again and you should take full advantage. Since I am semi-convinced my wonderful mom is the ONLY one reading this…
Happy Birthday Mom! (again!)
(**For all you Mama A fans out there her birthday is not until October 30th so do not worry you still have time to wish this beautiful lady a happy day!)
My mom has given and given my entire life and never asks for anything but our company and sometimes bacon so we decided it was time to give her what she didn’t even know she wanted…a SURPRISE birthday weekend 🙂 My Mom looked so stunning, her teeth were shiny and as white as a crystal. Thanks to Dentist Louisville for getting them whitened before the day! Her dress was spectacular and really showed her personality.
My mom is a total foodie and spends hours each week talking to me about food (okay maybe mostly listening but you get the point.) She is also an AMAZING cook, but for her birthday we wanted to give her a tasty and healthy dinner/brunch that she didn’t have to cook!
When we were planning, I decided that instead of going out to eat (and run the chance of anyone getting glutened or sick) we should give my mom the whole experience in her own house where we could spend time hanging out, dancing in the kitchen and spending time just catching up and having fun. Sounds fun right?! (understatement of the year!)
Well, we had to find a way to surprise her so we decided to get her and my dad to meet my brother and his family at a farm in Westminster, MD called Baugher’s to do some apple picking. My mom almost cancelled on my brother and his family but my dad’s last-minute coercing worked (thank goodness!) We met her in the parking lot and she was SURPRISED!!! Mission accomplished 🙂
We picked apples, drank some local fare (read: fresh HOT apple cider) and enjoyed a beautiful fall day (with crowds galore.) The apples we picked were going to be a part of our menu for the night because we wanted to show my nephew Joey the whole process of making food and he thought it was magical! (legit “Farm to Table”) Plus apples are IN SEASON for only a little longer and I would never want to miss the vitamin and mineral powerhouse that is a fresh apple!
My mom was all worried because she didn’t have any food for dinner (typical Italian mother 🙂 ), well good thing Bridgette and I already had that covered and had bought the groceries and planned the menu! Surprise!
Below you will find our menu (with some of the corresponding recipes, others are COMING SOON) that were all made by 3 of us (Me, Bridgette [my sis-in-law] and Cara [my cousin] ) and enjoyed by 8 adults and 2 children (and one dog…she ate the bacon)! The menu was 100% gluten free and allergen free so my mom could enjoy EVERY bite! (Cara and I may have enjoyed a glass of wine…or 2 Julia Child style)

Now that I’ve got your attention with BACON…it is time for another staple from
The Sassy Dietitian’s Kitchen 🙂
I posted a picture of this recipe the other night on Instagram and NO ONE guessed what it was! Not shocking since only 1 year ago I had no idea how to eat or prepare parsnips and I may have made the color change with all the paprika I put in them :-O ! Let me tell you these delightful veggies are one of my fall favorites and I highly recommend you giving them a shot!
Parsnips are a NUTRIENT-dense carbohydrate source meaning they are packed with vitamins, minerals and fiber that their refined carbohydrate (read: pasta, cookies, cake) friends are lacking.
They are a root vegetable and just so happen to be in season and I snagged them up at a local farmer’s market in Londonderrry, Vermont.
They are GREAT for a post-workout meal and if you wonder what I am talking about I highly recommend you listen to Nutrition Genius Radio both Episode 3 on Carbohydrates and the upcoming Episode 12 on Post Workout Nutrition (subscribe so you get the podcast as SOON as it comes out!) And if you would be a sassy friend and leave us a review we may just give you a shout out on a future episode!
Ok time for the deliciousness:

Hey there and Happy Friday!! Dance party time! If you know me, you know I dance pretty much all day long…but especially on FRIDAYs…shout out to my Crossfit AEvitas crew who dances (ahem laughs) with (at) me at 5:30AM!
But seriously I do workout…between dancing and chatting with all my faves 🙂 Look at my strong friends 🙂
So I am here today with a quick and smooth recipe (pun intended.) I do not commonly recommend smoothies as meals or snacks as it eliminates a lot of the digestive processes (chewing and whatnot) and creates a sugar rush if too much is consumed!
However, being that I workout with a lot of hard charging ladies and gents who rush to and from the gym I wanted to give them something to fuel and hydrate their bodies post workout. It is colorful, delicious and nutritious…what more could you want?!
Disclaimer: I do not recommend that smoothies be a main staple of your diet but used when you need some added fruits/veggies in your life and are super active whether it be from your crazy 9-5 on your feet job or your amazing running/yoga/crossfit/ironman/jazzercise skills!
I hope you enjoy, please leave comments and questions below BUT wait before you go…PLEASE subscribe to our AWESOME (read: hilarious) podcast on iTunes called:
and leave us your reviews…you may just hear us shout out to you on a future podcast!! (click link above or here!) Thank you bunches! Now for your powerful (hulk-like) smoothie 🙂
Stay Sassy and have a Berry Awesome weekend! (sorry I couldn’t resist!)
Hello sassy friends!
JJ and I are huge fans of pulled pork but have you ever looked at most ingredients in pre-made pulled pork OR bbq sauce? I urge you to turn over the next bottle of BBQ sauce you see and read the ingredients out loud. If High Fructose Corn Syrup or five other names disguised as sugar roll off your tongue PUT IT BACK ON THE SHELF and come back here and make this EASY and DELICIOUS recipe.
This recipe is a crowd pleaser and super delicious which if you even know a little bit about me, you know I LOVE TASTY FOOD! On top of that the BBQ sauce and pulled pork add some hidden vegetable sources for your children…ok well maybe for you too!
What I love about pulled pork is that it takes little time to prepare and at the end of a long work day you have a few days’ dinners waiting for you at home…and for us that is an achievement as we both have healthy appetites and leftovers are never a given.
This is a versatile dish. You can just eat the pulled pork right out of the crock pot and leave none for your significant other (or furry friend), put it in a lettuce wrap (cabbage and iceberg work best), put it atop some mashed parsnips (recipe coming soon) or scramble it in your eggs!
