I have seen this idea before of making meatloaf muffins as an “April Fools” type of recipe…you know the cupcake is meat and the icing is mashed potatoes but it looks like it could be a chocolate cupcake with vanilla frosting. But I had never thought to do it because making a meatloaf is SUPER easy and kind of a no brainer. This past week I was in a rush to make dinner before I went to work out and with only about 35 minutes to spare to prep and cook I knew there was NO WAY I would be able to cook my meatloaf to a safe temperature before I had to go climb ropes and swing from pull up bars oh yea and play on a slack line!
Since I have a science background AND I have a little bit of common sense I reasoned that if I just make my meatloaf into muffins they will cook a whole heck of a lot faster and be done in time for me to sneak into the workout right on time. So I prepped the loaf and went to go grab the tomato paste out of the fridge when my bacon fell to the floor….AH HA! The bacon wanted to be in the recipe too! Well I have made bacon wrapped egg muffin cups so WHY NOT?
And if you are wondering what kind of bacon I like? My FAVORITE is Niman Ranch but I will also settle for the amazing bacon sold by US Wellness Meats and Whole Food’s 365 brand, it all really just depends what is on sale!
I hope you enjoy these as much as we did! This is a GREAT idea to get kids to eat healthy food and you can even add MORE vegetables in just make sure you chop them super small so they will not notice!
