Description
This carrot caked baked oatmeal is a nice change up to breakfast and is not only delicious but super easy to make. Enjoy with or without the frosting.
Ingredients
Carrot Cake Baked Oatmeal
2 cups rolled oats
1 tsp baking powder
1/4 cup brown sugar
1 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cloves
1/4 tsp ginger
2 large eggs
1 tsp vanilla extract
1 cup unsweetened applesauce
1 cup shredded carrots
1/4 cup unsweetened coconut flakes
1/2 cup chopped walnuts
1/4 cup raisins
Healthy Cream Cheese & Greek Yogurt Frosting
4 oz. cream cheese, softened
1/4 cup plain Greek yogurt (full fat or 2%)
2 Tbsp maple syrup
1/2 tsp. vanilla extract
1/4 tsp cinnamon
Instructions
Carrot Cake Baked Oatmeal
Preheat oven to 350°F & grease an 8″x8″ baking dish (or line with parchment paper), set aside.
In a large bowl, mix rolled oats, baking powder, brown sugar, cinnamon, nutmeg, cloves, ginger & salt together.
Add in eggs, apple sauce & vanilla extract and stir until an even texture.
Fold in shredded carrots, coconut flakes, walnuts & raisins until well combined.
Pour mixture into baking dish and spread out evenly. Place in oven for 30-35 minutes or until center is baked through.
Remove from oven and let cool. Store in airtight container in the refrigerator for up to 1 week.
Healthy Cream Cheese & Greek Yogurt Frosting
In a large bowl or stand mixer add all ingredients. Mix with a hand mixer or stand mixer until creamy and lump-free.
Store in airtight container in refrigerator or top bars with as soon as they cool!
