Bacon Wrapped Goat Cheese Stuffed Dates


Ingredients

  • 1 pound pitted dates
  • 4 ounces goat cheese
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/2 teaspoon maple syrup
  • Pinch of salt
  • 1 package (8 ounces) bacon, sliced in half width-wise
  • Toothpicks

Instructions

  1. Preheat oven to 400°F.
  2. Line large baking sheet with parchment paper (or silpat liner)
  3. Mix goat cheese, cinnamon, vanilla, salt and maple syrup in a small bowl.
  4. Slice dates lengthwise (not completely through), to make a pocket, check for pits and remove.
  5. Fill each date with 1/2 teaspoon of goat cheese mixture, wrap with a slice of bacon and place toothpick through date and bacon.
  6. Line cookie sheet and bake for 20- 30 minutes until bacon is crisp, turning once.
