- 1 pound pitted dates
- 4 ounces goat cheese
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon pure vanilla extract
- 1/2 teaspoon maple syrup
- Pinch of salt
- 1 package (8 ounces) bacon, sliced in half width-wise
- Toothpicks
Instructions
- Preheat oven to 400°F.
- Line large baking sheet with parchment paper (or silpat liner)
- Mix goat cheese, cinnamon, vanilla, salt and maple syrup in a small bowl.
- Slice dates lengthwise (not completely through), to make a pocket, check for pits and remove.
- Fill each date with 1/2 teaspoon of goat cheese mixture, wrap with a slice of bacon and place toothpick through date and bacon.
- Line cookie sheet and bake for 20- 30 minutes until bacon is crisp, turning once.
